Let’s be real, nachos are one of those classic comfort foods that everyone craves, but the dairy-laden versions can leave your stomach feeling not-so-great. Well, fear not, my plant-based pals, because these vegan nachos are about to blow your mind (and your taste buds!).

The star of the show here is the creamy, cheezy, flavor-packed cashew sauce that comes together in mere seconds. It’s so ridiculously easy, yet packs a serious punch of protein and cheesy goodness that’ll have you questioning if it’s really vegan. It’s coming in with a whopping 18g per serving and it yields about four servings.
Here’s how it all goes down:
First, whip up that magical cashew sauce. Trust me, it’s life-changing. It has this amazing spice from Africa that I fell in love with on my trip to Kenya! Harissa is a versatile North African red pepper paste made from a mixture of hot chili peppers, spices like cumin and coriander, garlic, and olive oil. It adds a wonderful smoky, earthy flavor and a kick of heat to dishes like this vegan cashew cheese sauce.
