Vegan Buddha Banh Mi

Banh Mi is a traditional Vietnamese sandwich that combines the crunch of a fresh baguette with savory and tangy fillings. This vegan version offers a delightful blend of flavors and textures, making it a satisfying meal for any time of the day. Packed with breaded tofu, saucy vegetables, and fresh herbs, this sandwich is both nutritious and delicious.

Ingredients

For the Breaded Tofu

– 1 block of firm tofu, pressed and sliced
– 1 cup panko breadcrumbs
– 1/2 cup all-purpose flour
– 1 teaspoon paprika
– 1 teaspoon curry powder
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– Salt and pepper to taste
– Water (enough to make a batter, about 1/2 cup)
– Vegetable oil (for frying)

For the Saucy Vegetables

– 1/2 cup shredded carrots
– 1/2 cup cabbage
– 1/3 cup sweet chili sauce

For the Sandwich

– 4 small baguettes or Vietnamese baguettes (vegan)
– 1 cucumber, thinly sliced
– 1 jalapeño, thinly sliced (optional)
– Fresh cilantro leaves
– Fresh mint leaves
– Vegan mayonnaise
– Sriracha or other hot sauce (optional)

Instructions

Preparing the Breaded Tofu

1. In a shallow bowl, mix the water, flour, and spices to make a thick batter. (Add water little by little until desired consistency)
2. In another bowl, place the panko breadcrumbs.
3. Dip each tofu slice first into the batter, then coat evenly with panko breadcrumbs.
4. Heat vegetable oil in a skillet over medium-high heat. Fry breaded tofu slices for about 3-4 minutes on each side until golden brown and crispy. Drain on a wire rack or paper towel.

Making the Saucy Vegetables

1. In a small bowl combine the cabbage and carrots (you can also use a slaw mix).
2. Add the sweet chili sauce and mix until evenly coated

Assembling the Sandwich

1. Slice the baguettes in half lengthwise and lightly toast them if desired.
2. Spread a layer of vegan mayonnaise on one side of each baguette.
3. Add a few slices of breaded tofu, saucy vegetables, cucumber slices, and jalapeño (if using).
4. Top with fresh cilantro and mint leaves.
5. Drizzle with Sriracha or your favorite hot sauce, if desired. You can also drizzle Japanese BBQ sauce as well which adds a delicious flavor!
6. Close the sandwich, slice in half, and serve immediately.

Notes

– For added crunch, you can toast the baguettes lightly before assembling the sandwich.
– Avocado is a great addition to the sandwich as well and can be used instead of mayo if desired.
– Adjust the spiciness by adding more or less jalapeño and hot sauce.
– Store any leftover saucy vegetables in the fridge for up to a week and use them in salads or other sandwiches.
