How is Focaccia Made?

Making Vegan Focaccia is a straightforward process that begins with a simple combination of bread flour, salt, warm water, and instant yeast. After whisking the dry ingredients and mixing in the water, the dough is left to rest, undergoes a series of stretches and folds, and finally chills in the fridge overnight. This careful preparation results in a flavorful and airy bread that’s perfect for any and every occasion!

What Flour is Best for Focaccia?

Choosing the right flour is key to a successful focaccia. Opt for high-quality bread flour to achieve the desired texture and structure. Bread flour has a higher protein content, providing the necessary strength for the dough to rise and develop its characteristic chewiness. Usually 12% protein content or higher for the dough, although I have also used whole wheat flour and still came out amazing.

Will Focaccia Rise in the Oven?

Absolutely! The magic of focaccia happens in the fridge and in the oven. After allowing the dough to rise in the fridge for at least 8 hours, it is transferred to a prepared pan and left to rise at room temperature. As the focaccia bakes in the oven at 425°F, the yeast activates, causing the dough to rise beautifully, resulting in a golden and crisp exterior that has the perfect ASMR crunch.

There’s something truly special about the aroma of freshly baked bread wafting through your kitchen, and when it comes to a delightful and easy-to-make option, Vegan Focaccia steals the spotlight. This Italian classic not only promises a delicious experience but also caters to those embracing a vegan lifestyle. Not to mention I add a secret ingredient for even more flavor!

Ingredients

Ingredients:

  • 4 cups bread flour
  • 2 teaspoons salt
  • 2.5 cups warm water
  • 2 teaspoons instant yeast
  • 1 drop doTERRA Basil Essential Oil (Optional and adds a lot of flavor!)

Toppings:

  • Olive oil
  • Flakey salt
  • Optional: Rosemary, garlic, tomatoes (pre-oiled to prevent burning)

Instructions

  1. In a large bowl, whisk together dry ingredients.
  2. Add warm water and mix; the dough will be sticky.
  3. Cover with a towel and let it rest for 10 minutes.
  4. After 10 minutes, stretch and fold each side over to the other by pulling.
  5. Cover with the towel and let it sit for another 10 minutes.
  6. Repeat the pulling and folding technique for structure. Cover and let it sit for 10 more minutes.
  7. Oil the top of the dough, then plastic wrap it and place it in the fridge overnight or for at least 8 hours.
  8. After 8 hours, the dough will have risen.
  9. Add parchment to the bottom of a 9 x 13 baking pan and oil the sides and bottom for a crisp outside.
  10. Flip the dough into the pan, cover with a baking sheet, and let it sit at room temperature for 20 minutes.
  11. Preheat the oven to 425.
  12. After 20 minutes, remove the baking sheet, stretch the dough to fill out the pan, and add 1-2 tablespoons of oil on top.
  13. Create dimples in the dough by pressing your fingers into it.
  14. In a separate dish, coat the desired toppings with oil and spread them on top of the dough.
  15. Sprinkle flakey salt on top and place it in the oven for 25-30 minutes or until the underside is golden and crisp.
  16. Remove the pan from the oven and transfer the focaccia to a cooling rack.
  17. Let it cool for 10 minutes before cutting and serving. If making a sandwich, let it cool completely before slicing.

This will surely impress! Every time I make it, the focaccia gets devoured in 30 minutes 😅 Feel free to be creative with your favorite toppings.
