Ingredients

Dry:

  • 2 cups all-purpose flour
  • 3/4 cup cane sugar
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1 tsp Himalayan salt

Wet:

  • 1/3 cup plant butter
  • 3/4 cup plant milk
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

For the Lemon Icing:

  • 1 cup powdered sugar
  • 1012 drops lemon essential oil
  • 3 tablespoons water (add slowly, may need more for the right consistency)

Instructions

  • Preheat oven to 350°F and line 2 trays with parchment paper.
  • Add all of the dry ingredients to a bowl and mix.
    • Pro Tip: If using fresh blueberries, add to the dry mix and gently mix. Be careful not to mush.
  • Add plant milk and plant butter to the dry mix and gently mush the plant butter in hands before mixing in.
  • Once fully combined into a ball, move to a flat surface and sprinkle with flour.
  • Roll out to be about 1-2 inches thick, form a circle, and cut into 8 pie slices (cut those triangles smaller for more).
  • Bake for 12-15 minutes (can be 20 minutes).
  • Let cool for 5 minutes.

For the Lemon Icing:

  • Add all ingredients to a bowl and mix.
  • Dip scones into icing and enjoy.

Notes

Note: You can add white chips to the scone mix for a fun twist.
