Ingredients

Cookies:

  • 2 1⁄2 cups all-purpose flour
  • 3⁄4 cup powdered sugar
  • 1 1⁄4 cups vegan butter, softened
  • 1 teaspoon vanilla extract

Pie Filling:

  • 1 cup chopped pecan pieces
  • 4 tablespoons plant-based butter
  • 2⁄3 cup brown sugar
  • 2 drops dōTERRA Baking Blend essential oil
  • 1⁄4 cup coconut milk
  • Pinch of salt

Instructions

Directions:

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  2. In a large bowl, combine the flour, powdered sugar, vegan butter, and vanilla extract. Using a hand mixer on low speed, mix until a soft, crumbly dough forms that sticks together when pressed.
  3. Roll dough into 2-inch balls and arrange on the prepared baking sheets. Using the back of a spoon or small flat object, flatten each ball into a disk shape with raised edges to create a rim. Mold and define the rims.
  4. Make the filling: In a saucepan over medium heat, combine the pecans, plant-based butter, brown sugar, Baking Blend oil, coconut milk and salt. Heat, stirring frequently, until completely melted and well combined. Allow to bubble slightly, then remove from heat.
  5. Spoon 1-2 tablespoons of the pecan filling into each cookie crust.
  6. Bake cookies for 10-15 minutes until lightly golden brown around the edges.
  7. Allow to cool completely before serving. Enjoy!
